Lentils Salad Recipe  – for 1 big portion 🙂 I’m a big eater!

  • cooked lentils (cold)
  • h alf an apple
  • 3 mushrooms (of your favourite kind)
  • a handful of fresh spinach leaves
  • 2 table spoons of olive oil
  • 1 tablespoon of balsamic vinegar
  • salt & pepper
  • cashew nuts (optional)

Cut everything in salad-friendly sized dices and mix it all together. Simple as ABC, and as good as that!

btw, I used dry lentils that I boiled in water until softened.

You can add spices if you’re creative. I think cumin would go well but that’s yet to be tried!
